Dark Chocolate Peanut Butter Cups

Ah, peanut-butter cups, but healthy and guilt-free. I can never turn down a classic reeses cup, let alone these! This treat makes me swoon in every aspect: super easy to make, quick to settle, and absolutely delicioussss. You only need three ingredients, and if you’re like me, you’ll want to experiment with different fillings. I’ll give you some of my suggestions, but feel free to do whatever your taste buds want. At the end of the day, these babies will be your every-day treat.

ingredients: 

– 1 1/2 cup of chocolate chips (I always use dark chocolate, but if you want them sweeter, feel free and use milk or white chocolate)
– 4 TBSP of coconut oil
– peanut butter (choices: any kind of nut butter, nutella, speculoos cookie butter, that new reeses peanut butter mix).

the way:

– get yourself a mini cupcake pan and line them with mini cupcake foils. Set that aside.
– melt the coconut oil and chocolate chips together, constantly stirring.
– ladle a spoon of chocolate into each cupcake foil and put it into the fridge to set. This should only take about 5-10 minutes, as coconut oil tends to harden up quite quickly.
– remove the pan from the fridge and put a teaspoon-full of peanut butter on top of the hardened chocolate.
– take your chocolate mixture again (if it’s hard, zap it in the microwave real quick to soften it up) and pour it over the peanut butter until you no longer see the PB.
– put the pan back in the fridge for everything to set, 5-10 minutes.
