
As a baker, I typically don’t taste the batter until the finished product. Now, when it comes to recipe-testing, it’s a struggle due to my adamant nature, but so far everything has turned out OK. With these bites, they’re imitating cookie dough in a sense that it’s totally healthy for you, and you don’t even have to roll them out into balls – put the batter into a container and enjoy eating it with a spoon; basically treat it like any regular cookie dough, but your waist line will thank you later.
Shamelessly, after making these, I had to make another batch because I ate the first batch way too quickly.
ingredients:
– 1 cup raw cashews
– 1/2 cup rolled oats
– pinch of salt
– 1/2 TSP cinnamon
– 3 TBSP maple syrup
– 1 TBSP vanilla extract
– 1/4 – 1/2 cup chocolate chips
the way:
– Using a food processor, combing cashews, oats, salt, and cinnamon and pulse until a fine meal forms. Be careful not to over-pulse; you don’t want cashew butter.
– add in the maple syrup and vanilla extract into the cashew mix, and pulse again until a ball of dough forms.
– remove the dough from the food processor and put it in a small bowl.
– gently fold in the chocolate chips so they’re fully incorporated into the dough. If you want more chocolate chips, add in more.
OPTIONAL
– use a cookie scooper or a spoon, and scoop out the dough – then use your hands and roll the dough into little balls.
– alternatively, put the dough into an airtight container that’s lined with parchment paper, and you can eat it it with a spoon if your heart desires.
