
Ooooh these bites are so good. They’re not only super easy to make, but pretty good for your body as well. Cashews have been a recent lust for me, so I’ve been playing around with these bites, and cashew creamed cheesecake bites as well. Who knew nuts were so deliciously versatile.
Anyways, in these bites, you have sweet, nutty, and tart flavours all formed into a little love bite. How sweet.
ingredients:
– zest one lemon
– take that skinless lemon and juice it
– 12 dates
– 1 1/3 cup cashews
– 1 cup rolled oats
– 1 TSP vanilla extract
– 1/4 cup honey
– 1/4 cup flaxseed
– 2 TSP poppy seeds
– 2 TBSP hemp seeds
the way:
– with a food processor, pulse your cashews until it becomes a powder to meal texture.
– scoop 1/3 cup of your pulsed cashews and set aside.
– add in all the ingredients BUT save 1 teaspoon of poppy seeds and set aside and pulse until well combined.
– now, roll the dough into bite-sized balls.
– take each ball and roll them in your cashew meal that you’ve set aside.
– garnish your coated balls with some poppy seeds.
– store in an airtight container in the fridge or freezer.
